Blueberry and Rose Water Yogurt Parfait

It is considered that they contain one of the highest antioxidant capacity of all of the more well known fruits and vegetables. The main antioxidant compounds belong to a large group of polyphenols called flavonoids, one group of flavonoids are called anthocyanins, it is this group that have the impact on diabetes – several studies show that insulin sensitivity is improved and blood sugar levels are lowered when Blueberries are included in the diet. You will enjoy this delicious dessert even more in the knowledge that it’s a ‘Superdessert’.

- 400g/14oz Greek yogurt
- 15ml/0.5fl oz rose water
- 100g/3.5oz fresh blueberries
- 15ml/0.5fl oz maple syrup
- 1 tsp. lemon zest
- Mix yogurt, maple syrup, lemon zest, and rose water in a bowl.
- Layer the yogurt mixture and berries in serving glasses.
